Add yeast to ¼ cup of warm (not hot) water and stir.
Drop the flour and salt into a mixing bowl and stir
Drop olive oil into the ¾ cup of warm water, sir and add to the bowl
Add the yeast mixture to the bowl
By hand, mix thoroughly for about 5 minutes
Remove and knead for a few minutes.
Cut the dough in half, roll two balls
Place them in lightly floured bowls, cover and let rise in a warm place for about 1 hour, or until the double in size
Dump them onto your work surface and shape them into loaves about 15 inches long
Cover and let the loaves rise for another ½ hour
Preheat oven to 420° with your cooking stone or steel on the middle rack
Using a very sharp knife or razor. Cut 3 or 4 diagonal lines into the dough.
Optional: scramble an egg add a touch of water and brush this egg wash into the bread just before putting in the oven
Transfer the loaves gently to a pizza peel thanks been dusted with semolina.
Set your timer for 15 minutes, and if it looks a beautiful golden brown color as you saw in my video it's done.
Take it out and let it cool for a few minutes, then cut it, dip it into some extra virgin olive oil and you'll be in heaven!
