Homemade Butter Roti
  1. Sift flour and salt into a bowl then stir in melted butter until you have wet sticky crubms. Then add freshly boiled water and stir until dough comes together. Transfer to a lightly floured surface and knead until dough is very soft. Then cover dough with a damp cloth and allow to rest for 30mins, allowing the dough to rest makes for very soft roti

  2. Cut into equal size balls, this recipe makes 8. Flatten each ball as far as you can with the palm of your hand before rolling out as thin as you can. Keep the balls covered with a damp cloth while you work to keep the from drying out.

  3. Cook in a hot pan, no need to grease the pan as there is alot of butter in the dough. Once the top starts to bubble then it's time to flip over and cook the other side. 2-3 minutes per side.

  4. Keep your roti in a lined container with a lid, line with a kitchen cloth, the steam is what keeps them soft.
