Baked Fish And Vegetable Fillets
  1. Preheat your oven to 400°F (200°C). Prepare four sheets of parchment paper by folding each in half to create a crease, then unfold.

  2. In a medium bowl, combine the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, lime zest, lime juice, and red pepper flakes (if using). Whisk until thoroughly mixed.

  3. Distribute the broccoli florets and sliced red bell pepper evenly across one side of the crease on each parchment sheet.

  4. Place one cod fillet portion on top of the vegetables on each parchment sheet.

  5. Spoon an equal amount of the prepared sauce over each fish fillet and vegetable mixture.

  6. Sprinkle the sliced green onions over the fish and vegetables in each packet.

  7. Fold the empty half of the parchment paper over the filled half, aligning the edges. Starting from one end, create small, tight folds along the curved edge to seal the packet completely, forming a crescent shape.

  8. Carefully transfer the sealed parchment packets to a baking sheet.

  9. Bake in the preheated oven for 16-18 minutes, or until the fish is opaque and flakes easily with a fork.

  10. Remove the baking sheet from the oven. Let the packets rest for a few minutes before carefully opening them (steam will escape). Garnish with fresh cilantro before serving.
