  1. Preheat oven to 400°F.

  2. Put the potatoes, olive oil, and mustard into a Ziploc plastic baggie. Mix well. Let sit as long as possible — ½ hour to overnight (in fridge).

  3. Empty bag of potatoes into a large enough baking dish, so that potatoes cover bottom in a single layer. Sprinkle with salt and pepper. Stir.

  4. Bake, uncovered for about 45 minutes to 1 hour. Stir gently after the first 35 minutes and then stir occasionally. Once nicely browned and tender, remove from oven and serve.
