Baked Feta Eggs With Sautéed Garden Veggies
  1. Preheat oven to 400°F.

  2. Add a block of feta (about 7-8 oz) to a greased 8x8" baking dish.

  3. Crack 10-12 eggs around the feta.

  4. Drizzle with olive oil.

  5. Season with salt and black pepper.

  6. Bake for 20-22 minutes, until most of the eggs have set.

  7. Use a fork to stir it all together until scrambled eggs.
