Set a large skillet over medium high heat and add a little oil and the thinly sliced beef. Stir to break up the meat then let sear for several minutes before stirring again.
Slice the zucchini lengthwise into three thick planks. Slice each plank into three long strips and then cut those strips into small cubes.
Cook the meat for 2-3 minutes until just starting to brown then add in the zucchini cubes and continue to saute on high for another 1-2 minutes.
Add the minced garlic, soy sauce and hoisin sauce and cook for another 1-2 minutes to bring all the flavors together, and crisp up the meat nicely.
Serve over white rice with plenty of white sauce on the side to drizzle on top.
