Arrowtown Bakery Cafe's Vegetable Stack
  1. Boil potatoes, carrots, pumpkin and spinach or silverbeet until soft, drain and set aside.

  2. Fry onions, tomatoes and mushrooms until soft and set aside.

  3. When vegetables have cooled, slice into strips about 2cm thick.

  4. Combine tomato relish with tomato paste and garlic.

  5. Put two tortillas in the base of a 20cm round tin, liberally spread with tomato relish mix and layer potato strips topped with a sprinkling of tasty cheese.

  6. Place one tortilla on top and press lightly.

  7. Continue to layer stack with tomato relish mix, vegetables, and cheese.

  8. Spread fried onions and spinach or silverbeet throughout layers with other vegetables.

  9. Top stack with relish mix, calzone mix, parmesan cheese, pumpkin, and sesame seeds.

  10. Bake at 180°C for an hour covered with baking paper, then uncovered for 15 minutes.

  11. Leave to cool before removing from the ring tin.
