Peppermint Fat Bombs (keto)
  1. Line a baking sheet with parchment paper.

  2. Mix peppermint extract, coconut oil, shredded coconut, sweetener, sea salt, and heavy cream with a hand mixer until a paste.

  3. Spoon the mixture into a silicone mold. Freeze until solid, about 2 hours.

  4. Melt the chocolate layer ingredients in a saucepan over low heat, stirring frequently.

  5. Remove silicone mold from freezer and pop out coconut fat bombs.

  6. Using a fork, carefully dunk the fat bombs into the melted chocolate and place on baking sheet. Allow to harden in freezer.

  7. Once chocolate has hardened, remove from freezer and serve.
