In a large skillet, cook the ground pork over medium-high heat until browned and cooked through, 5-7 minutes, making sure to crumble the pork as it cooks.
Add the onion and garlic and cook for 2-3 minutes until softened.
Stir in the chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute.
Add the canned diced tomatoes and stir to combine. Reduce heat to low and let simmer for 10 minutes.
Remove from heat and stir in the shredded cheddar cheese until melted and well combined.
Serve warm with tortilla chips, crackers, or crusty bread.
