If you have a Vitamix or other high powered blender, use whatever kind of tofu you want. If you’re using a normal blender, get the silken tofu to get the right texture for your lassi.
Put half of a block of tofu in the blender with approximately 1 cup of frozen fruit (I like strawberries, blueberries, and/or banana), and approximately ¼ cup plant milk (I like coconut milk). Also add your vanilla and cardamom, measure with your heart.
Blend until smooth. If you used extra firm tofu in your Vitamix, put it on low to get the frozen fruit blended, then switch to a high setting for about 20+ seconds to get the smooth texture of a lassi.
Drink it right away. if it’s not sweet enough from the fruit sugar, add a little honey.
