Soy-free Red Lentil Tofu
  1. Rinse the lentils well, then soak them for a minimum of 4 hours to overnight. Drain the water and rinse again.

  2. Add to a blender with 2 cups fresh water and blend until perfectly smooth.

  3. Add to a pot on medium heat and bring to a soft boil. From there, stir constantly until a thick and smooth paste is formed.

  4. Transfer to a glass container, and let set in the fridge overnight.

  5. Cook the same way you'd use tofu, marinade, air fry, sauté etc enjoy!
