Cream butter & icing sugar gently (don't over-mix or cookies will spread on baking)
Add flour and mix gently to form a dough
Roll into tiny balls, press lightly with a fork to create an indentation
Bake at 175°C for 12–14 mins until edges are lightly golden
Cool completely, they'll firm up as they rest
Store in an airtight container for up to a month
