Grind the roasted sesame seeds in a mortar and pestle until broken down right before it becomes too fine. If you don’t have a mortar and pestle, place roasted sesame seeds in a zip top bag and gently smash with rolling pin.
Whisk together the rest of the ingredients for the sesame dressing and stir in the ground up sesame seeds.
Slice the tofu into 9 pieces. Pat both sides dry with a paper towel, then season with salt and pepper.
Place cornstarch into a shallow dish and coat both sides of tofu. Gently shake off any excess.
Place the crisper plate into the air fryer basket. Select the Air Fry function, adjust temperature to 450°F and time to 4 minutes, then tap Start/Pause to preheat.
Set parchment paper onto preheated crisper plate and coat with oil spray. Place tofu slices onto the parchment paper and coat tops with oil spray.
Select the Air Fry function, adjust temperature to 450°F and time to 20 minutes, then tap Start/Pause.
Stir together all the ingredients for the glaze. Flip tofu halfway through cooking. Glaze both sides of the tofu when 5 minutes remain on the cooking time.
Assemble by placing wild rice into a bowl, top with tofu, vegetables, mixed greens, and drizzle on sesame dressing, then serve.
