Make The Filling - Mix chicken, green onion, ginger, garlic, soy sauce, vinegar, sesame oil, and white pepper.
Cook The Dumplings - Spray avocado oil in a pan over medium heat. Add 1-2 tbsp filling per dumpling, leaving space between each one. Wet wonton wrappers with water and place over the filling. Pour in chicken stock, cover with a lid, and steam for 10-12 minutes until cooked through.
Make The Sauce - Mix all sauce ingredients together.
Serve - Top dumplings with green onion, sesame seeds, and chili crisp.
