*Not Vegan* Paratha Pockets
  1. To a bowl or mixing cup, crack the eggs in and add salt and black pepper. Whisk together well to combine.

  2. Heat a large non-stick frying pan over low heat and add vegetable oil. Pour in the whisked eggs. Slowly stir with a rubber spatula in circular motions continuously as they cook. The key is to go low and slow. Once the eggs hold their shape turn off the heat to prevent overcooking and set aside.

  3. Add bacon to a hot pan over medium heat. Allow it to fry on one side until golden and crispy, then flip it over. Add a sprinkle of brown sugar if you'd like at this step and continue to cook. Once crispy and fully cooked, take off the pan.

  4. Heat a frying pan over medium heat and add a little bit of oil.

  5. Add the frozen paratha in. To the center, add eggs, cheese, and beef bacon.

  6. Cover with another paratha on top and as it cooks, press down the edges together to seal it to the best of your ability.

  7. Continue to cook for 2 to 3 minutes until the bottom is golden and crispy. Flip over gently and repeat with the other side.

  8. Then drop the heat to low, cover, and let the paratha cook through in the center.

  9. Remove from the heat, cut in half, and enjoy warm!
