Baby Lacto-fermented Sweet Potatoes or Taro Root
  1. Poke a few holes in 2 pounds sweet potatoes or taro root and bake in an oven at 300 degrees for about 2 hours or until soft.

  2. Peel and mash in a bowl with 1 teaspoon seasalt and 4 tablespoons fresh whey. Cover, and leave at room temperature for 24 hours. Place in an airtight container and store in the refrigerator
