Jam & Buttered Toast Cookies
  1. Toast the sourdough bread

  2. Butter and jam the toasted bread

  3. Blitz the bread into flakes

  4. Brown the butter

  5. Mix browned butter with sugars and miso

  6. Add egg, yolk and vanilla to the mixture

  7. Fold in dry ingredients (flour, bicarb, baking powder, salt)

  8. Add white chocolate and 60g toast flakes to the dough

  9. Spoon jam over dough to marble without mixing

  10. Scoop dough portions and coat in toast flakes

  11. Chill the scooped dough

  12. Bake at 190°C for 9-11 minutes

  13. Top with extra white chocolate while warm

  14. Cool slightly and enjoy
