Thinly slice the ginger - no need to peel it.
Add to a saucepan with the water and chilli.
Boil until the water has reduced by half. (about 5 mins)
Stir through the honey until it dissolves.
Add the juice of half a lemon.
Allow the mixture to cool.
Add the apple cider vinegar and pour into a container to allow the flavours to infuse.
Serve 30ml topped up with soda, tonic, ginger beer etc.
