Add all dressing ingredients to a blender or small food processor
Blend for a minute or two until smooth
Taste and add salt if needed
If the mixture doesn't emulsify, add an egg yolk and ½ teaspoon of mustard to a separate bowl
While constantly whisking, add small dollops of the dressing to emulsify
Add the remaining salad ingredients to a bowl
Add the dressing and toss everything until combined
Store in the fridge for up to 3 days
