Preheat oven to 200°C
Boil your potatoes until just fork tender
Grease your muffin tray and then place a potato into each slot
Smash each potato with the back of a mug
Then with a small spoon make a small indent for your filling
Drizzle a little oil over each potato and season with salt, pepper and any other seasoning you fancy
Add some broccoli and a sprinkle of cheese
Bake for 20-25 minutes until golden and crispy
