Jamaican Banana Bread
  1. Preheat oven to 180 C. Grease and flour a 22cm x 12cm (approx) loaf tin.

  2. Mash the bananas.

  3. Beat the butter, honey, and sugar until light and fluffy, then add the eggs and vanilla essence and beat some more.

  4. Stir in the mashed bananas and walnuts.

  5. Add the flour, baking soda, ginger, and salt and mix into the wet ingredients until just combined – don’t over mix.

  6. Pour the batter into the loaf tin and bake for 1 hour or until an inserted skewer or knife comes out clean.

  7. Cool and slice and try not to eat it all at once!
