Season and press: Spread a thin layer of ground beef over one side of each tortilla, pressing it in gently. Season with garlic powder, onion powder, salt, and pepper.
Smash and cook: Place the tortillas beef-side down on a hot skillet or flat grill. Cook for 4–5 minutes until the beef is browned, then flip. Add a slice of cheddar to each taco and cook another 3–4 minutes, or until the tortilla is golden and crisp.
Make the sauce: While the tacos cook, stir together the Greek yogurt, mayo, ketchup, mustard, chopped pickles, and pickle juice to make the healthy burger sauce.
Top and serve: Remove tacos from the skillet and top with shredded lettuce, diced tomatoes, red onion, pickles, and a generous drizzle of burger sauce. Serve hot and enjoy!
