Squeeze half a lemon into a tall glass, removing any seeds with your hand or a small strainer. You need about one teaspoon of fresh juice.
Measure half a teaspoon of baking soda and add it directly to the lemon juice in the glass. Let the mixture fizz for 20 to 30 seconds until the bubbles calm down.
Pour 8 ounces of cold filtered water slowly into the glass while stirring gently to avoid overflow.
Drop 4 to 6 ice cubes into the glass. Add a pinch of pink Himalayan salt now if using.
