Preheat the oven to 425°F (220°C) and line a baking tray with parchment paper.
In a bowl, toss potatoes, onion, olive oil, salt, pepper, and seasoning until evenly coated.
Spread mixture on the tray and roast for 25–30 minutes, flipping every 10 minutes for even browning.
Stir in cooked beef bacon while still hot.
Garnish with fresh parsley or green onions and serve warm.
