Start by mixing together all the sauce ingredients in a bowl.
Season the chicken and fry this off until browned and cooked through, then add in the sauce and cook until the chicken is coated.
Remove the chicken from the pan and add in the spring onions and peppers and cook until they're starting to soften.
Add in the cooked rice and soy sauce, give it a good mix and add the chicken back in.
Garnish, serve and enjoy!
