Mediterranean-style Lamb Shanks
  1. Combine flour, cinnamon, coriander and salt in a shallow bowl. Coat lamb shanks in the mixture. Heat oil in the pot, brown lamb shanks in two batches, about 3-4 minutes each side. Remove and set aside.

  2. Add remaining oil and remaining flour to the pot. Using a slotted whisk, whisk until combined. Cook until a paste forms, about 1 minute.

  3. Return the lamb shanks to the pot. Add onions, potatoes, capsicum, garlic and oregano. Cover the pot.

  4. Select SLOW COOK LOW 8 hrs and set time for 4 hours. SLOW COOK will allow the pressure to release. Remove lid and stir through.

  5. When cooking is complete, carefully release pressure. Ladle pressure release to 10 kPa. Allow mixture to stand for 10 minutes. Serve with fresh dill and lemon wedges. Garnish with fresh dill and lemon.

  6. Divide vegetables between serving plates, then ladle sauce and spoon over the sauce. Garnish with fresh yogurt and lemon wedges.
