Knead all the pasta dough ingredients together well until smooth. Wrap in plastic wrap and let rest for at least thirty minutes.
Mix the filling ingredients in a bowl and scoop into a piping bag.

Use cookie cutters to cut out shapes from the rolled dough.
Pipe a small amount of filling into the center of one shape, place another shape on top, and seal the edges.
Boil salted water, cook the ravioli until they float, and serve with olive oil and Parmesan cheese.
