High-protein Spinach & Feta Biscuits (gluten-free)
  1. Preheat oven to 350°F (175°C) & line a baking sheet with parchment paper.

  2. Heat olive oil in a pan. Add green onions and cook for 1–2 min. Add spinach, cook until wilted (2–3 min). Season with salt & pepper. Let cool.

  3. In a bowl, mix egg whites, spinach mix, almond flour, baking powder, feta. If too crumbly, add a splash of water or oil.

  4. Form into 6 biscuit shapes or drop spoonfuls onto the tray.

  5. Bake 20–25 mins until golden on the edges.

  6. Let cool slightly & enjoy!
