Prepare the Crockpot: Lightly grease the inside of your slow cooker with cooking spray or a small amount of oil to prevent sticking.
Layer the Ingredients: Place the baby potatoes in an even layer on the bottom of the crockpot. Add the beef bites on top of the potatoes.
Make the Garlic Butter Sauce: In a small bowl, whisk together melted butter, minced garlic, onion soup mix, black pepper, paprika, dried parsley, and beef broth. Mix until fully combined.
Add the Sauce: Pour the garlic butter mixture evenly over the beef and potatoes.
Slow Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the beef becomes tender and the potatoes are soft.
Add the Cheese: During the last 20 minutes, sprinkle shredded cheddar cheese over the top. Cover again and cook until melted.
Serve: Serve hot with fresh parsley if desired. This dish pairs wonderfully with crusty bread or a simple side salad.
