Toast your cinnamon and rice on a dry skillet over medium heat until nice and golden brown.
Add to a bowl, along with 4 c of hot water. Let it soak for at least 5 hours.
Once your rice is ready, start the rest of the eggnog.
Add your egg yolks & sweetened condensed milk into a bowl. Whisk until nice and smooth, they’ll be a light yellow color.
Add your evaporated milk, heavy cream, salt, vanilla, all spice, and nutmeg to a pot. Cook on medium low while stirring often.
Once it starts steaming, slowly whisk in about half your milk into your egg mixture.
Add the egg mixture back into warm milk pot while stirring. Let that cool until a gentle boil (About 150F).
Strain into desired pitcher, and allow to cool a bit.
While that cools blend your rice/cinnamon/water mixture on high for no more than 30 seconds.
Once your eggnog has cooled a bit strain in your blended rice mixture.
Give it a good stir & now it just has to chill in the fridge till it’s cold.
Serve as is or add a splash of rum & enjoy babe!
