Autumn Tuscan Style Soup
  1. Heat a large pot on medium heat.

  2. Add sausage grind & cook for about 5 mins, until golden.

  3. Remove sausage from pot (keeping any fat in pot) and add a drizzle of olive oil, fennel, onion, garlic, rosemary & salt.

  4. Cook for 5 mins to soften.

  5. Return sausage along with stock & bring to the boil.

  6. Simmer for 50 mins.

  7. After 50 mins add pasta & cook for about 8 minutes.

  8. Add lemon juice, season to taste with salt and pepper and then add greens.

  9. Cook for 1-2 mins until greens are tender.

  10. Remove from heat & mix through grated Parmesan.

  11. Preheat oven to 180’c.

  12. Place sourdough on an oven tray and divide sausage between bread.

  13. Spread into a thin layer to cover bread.

  14. Sprinkle over cheese & bake in oven for 10 mins.

  15. Switch oven to grill and cook for 5 more mins, until golden & bubbling.
