Heat a large pot on medium heat.
Add sausage grind & cook for about 5 mins, until golden.
Remove sausage from pot (keeping any fat in pot) and add a drizzle of olive oil, fennel, onion, garlic, rosemary & salt.
Cook for 5 mins to soften.
Return sausage along with stock & bring to the boil.
Simmer for 50 mins.
After 50 mins add pasta & cook for about 8 minutes.
Add lemon juice, season to taste with salt and pepper and then add greens.
Cook for 1-2 mins until greens are tender.
Remove from heat & mix through grated Parmesan.
Preheat oven to 180’c.
Place sourdough on an oven tray and divide sausage between bread.
Spread into a thin layer to cover bread.
Sprinkle over cheese & bake in oven for 10 mins.
Switch oven to grill and cook for 5 more mins, until golden & bubbling.
