  1. Beat egg whites, slowly add sugar until glossy soft peaks form

  2. In another bowl, mix flour, mix-ins and zest

  3. Gently fold meringue into dry ingredients to create thick batter

  4. Spoon batter into a lined or sprayed loaf tin

  5. Bake in a preheated oven at 180°C for 30 minutes

  6. Cool slightly, then slice thin with a serrated knife

  7. Bake again for 20-25 minutes until golden and crispy

  8. Dip in melted chocolate if desired
