Creamy Tuscan Chicken Orzo
  1. Season chicken with paprika, salt, garlic powder and onion powder.

  2. Heat olive oil in a large pan and sear chicken for 2–3 minutes each side, then remove and set aside.

  3. In the same pan, melt butter and sauté shallot and garlic until fragrant. Add sundried tomatoes, then pour in white wine and let it reduce slightly.

  4. Add orzo, chicken stock, salt, chilli flakes and Italian seasoning. Simmer, stirring often.

  5. After 5–6 minutes, stir through cream, spinach and parmesan. Continue cooking until the orzo is tender, adding more stock if needed.

  6. Place chicken back into the pan, cover and cook on low for around 10 minutes, or until the chicken is cooked through and the orzo is creamy.

  7. Finish with extra parmesan and enjoy.
