  1. Season 2 lbs Wagyu skirt steak with S+P. Sear on high heat (cast iron or grill) until med-rare.

  2. Mix parsley, cilantro, oregano, shallot, garlic, Fresno chile, red wine vinegar + olive oil. Salt to taste.

  3. Cut russets into thick rounds, sear in oil, baste with butter/garlic/herbs, then braise in broth + roast at 425° until golden + tender.
