Stuffed Pepper Skillet
  1. Heat a large skillet to medium and add in the ground beef, half the salt and pepper. Cook until browned, then remove and set aside.

  2. Add in the remaining salt, pepper, olive oil, butter, onion and bell peppers. Sauté for a few minutes, then add in the garlic ad sauté for 15 seconds.

  3. Pour in the chicken broth, tomato paste, tomato sauce, tomatoes, dried thyme and stir until well combined.

  4. Add the ground beef back in and simmer for 10 minutes, partially covered and stirring occasionally.

  5. Stir in the cauliflower rice and cook for another 5 minutes.

  6. Top with the shredded mozzarella cheese, place the lid on and turn the heat off. Allow the cheese to melt before serving.
