Preheat the oven to 350 degrees and spray two 9” round cake pans with nonstick spray.
In a bowl add the eggs and sugars. Mix until slightly frothy, about 3-5 minutes.
Add the vegetable oil, vanilla extract, mashed bananas, pineapple and mix for a couple minutes.
In a bowl mix the dry ingredients. Add the dry ingredients to the wet mix, mix until just incorporated.
Fold in the pecans and coconut. Divide in between the cake pans and bake for 45-60 minutes or until a toothpick comes out clean. Cool completely.
For the cream cheese frosting, start with 4 cups of sugar. Add all of the ingredients in a mixing bowl & mix until smooth and decorate your cake. Enjoy!
