Add all the dough ingredients, except the butter, to a large bowl and start kneading for 5 minutes until a smooth dough forms.
Add the 20g of softened room temperature butter and knead it in for another 5 minutes. I started this in a bowl & once it had combined kneaded it for the remaining time on a floured surface.
Place the dough in an oiled bowl, cover it & allow it to rise in a warm place for an hour. I like to heat my oven up for 2 minutes. Turn it off and leave the dough to rise in it. The dough should double in size.
In a small bowl combine the 150g softened room temp butter with @gourmetgarden_aus Cold Blended Garlic and Italian Herbs Paste. Mix well.
Once the dough has risen place it on a floured surface. Roll it into a square approximately 50 cm x 50 cm. Spread the garlic butter all over all the way to the edges with a spatula. And sprinkle all the mozzarella over.
Using a pizza cutter, cut it into 16 squares. Stack the squares ontop of one another in groups of 4(don't Squish them together). Stack all 16 squares into a greased loaf tin. Cover & let it rise (proof) again for 45 minutes.
Heat the oven to 180°C. Once the loaf has risen (proofed) for 45 minutes egg wash it & sprinkle mozzarella ontop. Bake for 35-40 minutes. & enjoy!
