Preheat the oven to 400 degrees F.
In an oven safe dish, toss together the apples, cinnamon, butter and brown sugar (if using) and place the dish in the oven.
Rub the pork chops with a bit of olive oil and season them with salt and pepper (both sides).
Over medium heat, in an oven safe skillet, sear one side of the pork chops for 1-2 minutes until lightly browned.
Flip the pork chops over and sear the other side for about a minute and then turn off the heat.
On each pork chop, spread the mustard and brown sugar, using the back of a spoon to coat the chop.
Sprinkle on the cinnamon and basil, using the spoon again to spread it evenly.
Place the skillet in the oven and bake for 10-15 minutes, or until the pork chops reach an internal temperature of 145 degrees F when tested in the thickest part of the meat.
Let rest for 5 minutes before serving with the baked apples (they should be done about the same time as the pork).
