Gardener's Pie
  1. Begin by bringing a pan of water to the boil and peel and dice the potatoes and add to the water.

  2. Leave to boil for 20 minutes or until they’re soft enough that a fork breaks them in half.

  3. Meanwhile heat Olive oil in a pan and dice the onion.

  4. Cook until translucent and then grate or crush the garlic and add that and cook for a further 2 minutes

  5. Peel and dice the carrots and add those and cook for 5 minutes.

  6. Dice the bell pepper and add that alongside the peas.

  7. Mix well and leave to cook for 10 minutes.

  8. Preheat the oven to 190 C

  9. Add the tomato purée lentils and herbs and cook down, you may want to add splashes of water to keep the mixture moist.

  10. Drain the potatoes and add the butter and milk and mash until fluffy

  11. Add the sauce to an oven dish and top with the mash potato, push down and take with a fork to make little lines in the potato

  12. Bake for 45 minutes, or until the top is golden and crunchy
