  1. Blend cottage cheese + eggs + almond flour + vanilla + salt until completely smooth

  2. Transfer batter to a piping bag

  3. Grease a 12-cup muffin pan well

  4. Pipe batter in a spiral into each muffin cup

  5. Bake at 375°F for 18–22 minutes until deep golden caramel

  6. Remove while warm

  7. Brush lightly with melted butter

  8. Roll each twist in cinnamon sugar mixture

  9. Serve warm — snap and pull apart
