Mini Twix Bites With Homemade Vegan Date Caramel
  1. Preheat oven to 350F. Grease/line a mini muffin tin.

  2. In a medium bowl, mix together the oat flour, maple syrup, vanilla and avocado oil. Once there are no clumps, spoon 1 tsp of the mixture into each of the muffin cavities. Use your finger to press down evenly. Bake 12 minutes. Remove from oven and set aside.

  3. Next, make the date caramel. In a food processor, add dates, almond milk, vanilla and salt. Process until completely smooth, stopping the food processor at times to scrape down the sides. After about 3-4 minutes, the caramel should be smooth.

  4. Spoon 1 tsp of the caramel on top of the shortbread. Repeat until all muffin cavities are filled.

  5. Next, add chocolate chips to a medium bowl. Add the coconut oil. Microwave in 2-3, 30-second increments, until completely smooth.

  6. Spoon chocolate mixture on top of the caramel mixture. Place the tray in the freezer for 30 minutes to set.

  7. Eat and enjoy! Add extra Twix bites to a covered container and store in the fridge or freezer.
