Pre-heat oven at 350F
separate the egg whites and yolk. Keep in separate bowls.
Add sugar to egg yolks and mix on high speed until creamy
Add butter and chocolate together and melt together in a bain-marie
Add chocolate mixture with sugar and yolk mixture
Add zest of orange, almond flour and mix
Add liquor, mix (batter will look granular)
Take egg whites and whip until soft peaks form. Add some sugar and whisk until firm peaks form
Gently fold egg whites into batter
Butter and flour a cake pan
Add mixture into pan, tap the bottom to get air bubbles out
Bake at 350F for 30-35 minutes
After done, let cake cool all the way before removing from pan, sprinkle with powdered sugar
Note: Don’t overwhip the whites. Only whip until the mixture looks creamy and firm peaks form. That means when the whisk is pulled out, the tips of the egg whites will slightly droop. For best results, don’t beat until dry, stiff peaks form.
