Add oiled rice to the pot first, then peas, coconut powder, and mix.
Pour in liquid + browning or pea purée. Stir well.
Add all seasonings. Taste your liquid—it should be SALTY like the sea.
Bring to a boil. Cover and steam on low for 15–20 mins until fluffy.
Remove thyme, pimento, and pepper. Fluff. Serve. Watch the table go silent.
