7 to 9 medium Roma tomatoes

1 can petite diced tomatoes

5-15 jalapeños depending on how spicy hot they are (you can start with 2 and keep adding to your desired flavor. I usually start with 5. You can also de-seed them to make it less spicy. But I like the seeds.)

4 bushels green onions sliced

½ medium red onion cut up

about a handful fresh rinsed cilantro leaves (l’ll even use the stems that break off when I grab the leaves)

3 large garlic cloves. I also use a garlic press but you can mince it

juice from 2 juicy medium limes

1 tsp Gebhart chili powder or California chili powder in the Mexican spices at the grocery store

1 tsp ground cumin

1 tsp white sugar

1 tsp salt

1 tsp pepper

I have a small chopper so I chop up one thing at a time then mix it all together in a large bowl, I have a small food processor that I use sometimes and do the same with just pulse for 1 second at a time to get the desired junks.
