Add all ingredients except the chocolate to a food processor and blend until well mixed
If the mixture is too wet to hold together, transfer to a container and freeze for a few hours
Take small spoonfuls and shape into balls
Melt the dark chocolate
Using 2 forks, dip the truffles into the melted chocolate to fully coat
Transfer to a tray lined with baking paper
Sprinkle with flaked sea salt or raw cacao nibs if desired
Transfer to the fridge to fully set
Remove from the tray and transfer to the freezer, or keep in the fridge if eating quickly
