Pepperoncini Dressing
  1. In a mini food processor, blend the pepperoncini, brine, olive oil, and several grindings of black pepper until smooth and emulsified; it will still have texture.

  2. Taste and add salt if necessary.

  3. Blend in the mayonnaise, a teaspoon at a time, up to 3 teaspoons.
