Angel Biscuits
  1. Heat the oven to 425°F.

  2. Combine the yeast with ¼ cup warm water in a small bowl. Let sit for 5 minutes.

  3. Combine the flour, sugar, baking powder, salt, and baking soda in a large bowl. Add 1 cup (2 sticks) of the butter and blend until mixture resembles coarse crumbs.

  4. Add the buttermilk and the yeast mixture and stir just until combined. Transfer the dough to a floured surface and knead.

  5. Roll out the dough until ¾ inch thick. Cut into rounds and transfer to an ungreased baking sheet. Let the dough rest for 10 minutes.

  6. Brush the biscuits with melted butter. Bake until golden brown, 10 to 15 minutes. Serve hot or warm.
