Dice the onion, slice the sausage, and prep all ingredients.
Grease your crockpot insert with cooking spray or butter.
Add hash browns, sausage, onion, and 2 cups of cheddar cheese to the crockpot.
In a bowl, mix the cream of mushroom soup, sour cream, creole seasoning, salt, and pepper.
Pour the sauce over the potato mixture and stir to combine evenly.
Sprinkle the remaining ½ cup of cheese over the top.
Cover and cook on LOW for 6 hours or HIGH for 4 hours.
Check potatoes for doneness. Serve warm.
