Chicken Pad Thai
  1. Prep rice noodles according to the box instructions then set aside

  2. Cook your cubed chicken in a large WOK or pan (I marinated mine in the above sauce over night, this isn't required but you can do this for extra flavor) once chicken is thoroughly cooked- about 5-6min on each side with a slight golden brown "seared" look, then set it aside

  3. Prep your sauce with the ingredients above, mix and set aside

  4. In the same pan add carrots, saute for 2 mins then add your eggs. Stir and combine the mixture until eggs are cooked through

  5. Add yellow and green onions, cook for 2-3mins until fragrant

  6. Add chicken, noodles, sauce mixture, and bean sprouts into the pan and combine

  7. OPTIONAL- top with cilantro, red pepper flakes, and fresh lime
