Set your oven to 375°F and lightly spray an 8×8 baking dish with olive oil spray.
Heat a skillet over medium-high heat. Spray with olive oil. Sauté diced onion for 3 minutes. Add minced garlic and stir for 30 seconds. Add ground turkey and break it apart as it browns, about 7 to 8 minutes. Season with salt, pepper, and 0.5 tsp Italian seasoning. Stir in marinara sauce and simmer on low for 5 minutes. Remove from heat.
Blend cottage cheese, egg, and 1 tsp Italian seasoning in a blender or food processor for 30 seconds until smooth. Season lightly with salt and pepper.
Spread a thin layer of meat sauce on the bottom of the baking dish. Add 2 wraps (cut to fit). Spread half the cottage cheese mixture, then add meat sauce and half the mozzarella. Repeat with 2 more wraps, the remaining cottage cheese, and more meat sauce. Top with the last 2 wraps, remaining meat sauce, remaining mozzarella, and all the Parmesan.
Cover the dish tightly with foil. Bake for 25 minutes.
Remove the foil and bake for 10 to 15 more minutes until cheese is bubbly and golden.
Remove from oven and let the lasagna rest for 15 to 20 minutes before cutting to allow the layers to firm up.
